Things to make with lentils
So I have created some pretty kickass recipes this week using up a package of precooked lentils (in the refridgerated section of trader joe’s). Here is my take on a lentil and black bean burger, and lentil vegetarian soup.
Lentil and Black Bean Burger:
Mix roughly 3/4 cup lentils with 1/2 cup black beans in a bowl
Add 1 whole egg
Add 2 tbsp bread crumbs
Add garlic, red pepper flakes, rosemary, and oregano seasoning to your liking
Add salt and pepper to taste
Add 1 tsp olive oil
Mash up with a fork for a more textured burger, or blend in blender or food processor till it makes a thick, grainy paste
Form patties and cook on oiled pan, 3-5 minutes on each side or until browned and firm throughout
I ate mine bunless and with spicy ketchup and sweet potato fries!
Lentil Vegetarian Soup:
Dice 2 stalks of celery, 1/2 onion, 2 carrots
Throw in pot with 1 tbsp of oil, cook for 5-7 minutes
Add 1 can of diced tomatoes, 1/2 cup black beans, 1 cup pre cooked lentils
Add 3-4 cups chicken or vegetable broth
Add sriracha to taste, 2 cloves garlic, 1 tsp paprika, 1 tbsp chopped parsley
Simmer, then blend with food processor till evenly thick with some chunks throughout
